Quick basic udon recipe that’s great for lunch.

I use this recipe when I want a warm tasty lunch and don’t want junk food. All you need is frozen udon in the freezer!

WHAT YOU NEED:
-1 pack of frozen Udon
-Maitake mushrooms or any other topping of choice
-1 pc of Konbu seaweed for umami
– Green Onion for topping
-1 pack of Dashi or Katsuo bushi for broth
-Soy Sauce or Mentsuyu (Dashi + shoyu) for flavor
-Mirin (optional for a bit of sweetness)
-Yuzu pepper sauce

WHAT TO DO:
Put Konbu in pot and heat up
Take out Konbu before water boils
Add Dashi pack
Remove pack and add Shoyu/ Mentsuyu to taste
Pour soup into bowl
Boil Maitake mushroom in water
Boil water and cook Udon for 1-2 minutes
Remove Udon and drain water
Add Udon to soup in bowl
Add Mushroom toppings
Add Green Onion
Add Yuzu Pepper sauce
Done!
