How to make Mayo Pon Chicken Katsu Don.
Mayo means Mayonnaise and Pon means Ponzu and Katsu means cutlet.
(Ponzu is a citrus-based sauce commonly used in Japanese cuisine.)

●Mayo Pon Chicken Katsu Don(for 2 servings)
2 chicken thigh
some Nama Panko
1 egg
some flour
1/2 onion
some spring onion
some Ponzu, mayonnaise

●Special mayonnaise
1 egg yolk
1/2 tsp salt
1/2 tsp sugar
some white pepper
1.5 tbsp white wine vinegar
150 ml oil

●Special Ponzu
600 ml Sudachi juice
600 ml soy sauce
200 ml mirin
2 kombu
50g Katsuobushi
