Hello! In this video, I will show you how to make Tantan Tsukemen (坦々つけ麺).
Tantanmen is the Japanese version of the popular spicy Dan Dan noodles originated from Szechuan which are often served dry or in a creamy broth with sesame paste added. For my recipe I created a Tsukemen version allowing the best of both styles, the soup is rich with a spicy kick and tinge of sourness, great for a dipping noodle experience.
In my recipe, I used chicken as the soup base and also made the chilli oil and sesame sauce from scratch. Instead of chashu, I used stir fried minced pork which is crispy and aromatic. The ramen broth is a blend of the soup, sauce and sesame paste which combines all the flavours for a creamy texture. As always, I did not use any MSG because I tried to use many alternative ingredients to bring out the umami in my own recipe.
