After eating our way through all the chocolate in the house, we are ready to kickstart a healthier week in quarantine 🌱🌸 Bodhi has created a simple and healthy Buddha Bowl recipe for you to make at home.

Prep Time: 40 minutes  

Ingredients:

1 pack green tea soba noodles
4 quarters broccoli (cut into florets)
1 avocado (sliced)
½ carrot (shredded)
½ pack spicy tofu
1 tsp sesame seeds (optional)
1 tbs sesame oil
1 tbs soy sauce
Salt and pepper to taste
Wasabi Mayo (see our vegan wasabi mayo recipe)

Method:

Bring a large pot of lightly salted water to a boil and fill a large bowl with ice water
Boil soba noodles for 3 minutes
Strain and quickly place noodles into iced water. Drain, add sesame oil and soy sauce and mix well
Bring a small pot of lightly salted water to boil and fill a small bowl with ice water
Add broccoli to blanch for 1 minute, strain and place broccoli into iced water. Drain
In a serving bowl place Soba noodles, broccoli, sliced avocado, shredded tofu and carrots. Add salt and pepper to taste
Sprinkle sesame seeds
Serve cold or warm
