Chanko Shogun’s Sweet Simmered Ayu🐟 (Pressure Cooker & Green Tea)
【Ingredients】
Ayu / Salt / Oil / Coarse Sugar
Seasonings (1:1 ratio): Green tea, Sake, Mirin, Sugar, Soy sauce
Liquid: Water (just enough to cover)

【Instructions】
Prep: Rub with salt to remove slime, remove guts and gills, then pat dry.
Sear: Pan-fry both sides until lightly browned.
Pressure cook: Add ayu, seasonings, and water to a pressure cooker and cook for 20 minutes.
Reduce: After releasing pressure, remove the fish. Add coarse sugar to the sauce and simmer until glossy.
Finish: Pour the reduced sauce over the fish.

【Why add green tea】
Deodorizing: Catechins help remove fishy odors.
Tenderizing: Tannins soften even the bones.
Balancing: Cuts richness and enhances umami.
