●台湾まぜそば(1人分)
 極太麺:1玉
 ニラ/ねぎ/刻み海苔:適量
 台湾ミンチ
にんにく
 削り粉
 卵黄:1個
 香味油(又はサラダ油):大さじ1
 ラー油:小さじ1
 醤油ダレ:大さじ2

●台湾ミンチ(4人分)
 合挽きミンチ:250g
 香味油:大さじ1.5
 鷹の爪:1本
 にんにく:1片
 豆板醤:大さじ1
 紹興酒/醤油:大さじ1
 砂糖:小さじ1
 
●醤油だれ(4人分)
 みりん:60㏄
 醤油:60㏄
 昆布:一切れ
 水:30㏄

●香味油
 サラダ油:100㏄
 ごま油:20㏄
 桜海老:2g
 カツオ厚削り:10g

●Taiwan Mazesoba(for 1 people)
1 portions Chinese thick noodles
some Chinese chives/spring onion/Shredded nori seaweed
some Taiwanese-style minced meat
some garlic
some fish meal
1 egg yolk
1 tbsp Koumi oil
1 tsp Chinese chilli oil.
2 tbsp sauce

●Taiwanese-style minced meat(for 4 people)
250 g minced pork
1.5 tbsp Koumi oil
1 red chili pepper
1 clove of garlic
1 tbsp Doubanjiang
1 tbsp Shaoxing wine/soy sauce
1 tsp sugar

●Mazesoba sauce(for 4 people)
60 ml mirin
60 ml soy sauce
1 piece kombu
30 ml water

●Luscious oil
100 ml oil
20 ml sesame oil
2 g dried shrimp
10 g thick-cut bonito flakes
