Uni-Ikura don or sea food bowl are popular dish from Hokkaido.
Ingredients I used (serving 2)
– miso soup –
: 4 prawns’ head
: 30g miso (you can use red miso or blend)
: 500ml water (will become prawn stock)
– simple baked prawn –
: 4 prawns (body with shell)
: salt
: Wasabi + soy sauce (if you want to dip)
– Uni-Ikura don –
: Ikura (salmon roe)
: Uni (sea urchin)
: Rice
– seasoning sauce for Uni –
: 2 tbsp stock from prawns
: 1 tsp sake
: 1 tsp mirin
: 1 tsp sugar
: 2 tsp soy sauce
