●Motsu tuke shoyu udon(for 3 servings)
 3 bundles udon noodle
 300 g of beef intestine
 some Chinese chive
 some spring onion
 700 ml dashi stock
 50 ml soy sauce
 2 tbsp mirin
 1 tbsp sugar
 2 red chili pepper

●Dashi(700 cc)
 1000 ml water
 10 g kombu
 30 g mixed-kezuribushi(or dried bonito)

●Udon noodle
 300 g all-purpose flour
 8 g salt
 130 g tepid water
